Arugula Week: Day 3 - Apple, Arugula & Chickpea Wraps

Aren't you just loving Arugula week? I know I am!  Here is the third recipe for your arsenal of arugula recipes.  A fabulous and very healthy wrap.  This is a delicious mix of flavors and textures.  

While we were in France, eating boatloads of pastries and bread, I found myself craving fruit and vegetables.  We generally eat quite a lot of fruits and vegetables, and I could tell that my body really needed them to offset all the gluttony.  

We purchased some of the most amazing baskets of strawberries that I have ever had at the farmer's market, and we bought lots of greens.  I found this wrap recipe on The Kitchn and we made it a few times while we were there.  When we got home, I decided to make a few modifications to make it more me, and to make it taste even better than the original.    

These babies are fantastic, and full of healthy and beautiful vegetables!  It is a vegetarian recipe, but I think a little balsamic glazed chicken would be a great meat filling.  








Apple, Arugula & Chickpea Wraps: 
inspired by recipes from My New Roots and The Kitchn
serves 6

6 large tortillas
1 cup chickpeas
1 large raw beet, peeled and shredded
4 - 6 cups of arugula
1 apple, diced
1/4 cup white cheddar cheese
1/2 cup balsamic dressing (recipe below)

Begin by laying your tortilla out and putting a few tablespoons of chickpeas on it, add a sprinkling of shredded beet, a nice handful of arugula, and a small handful of diced apple.  Top with some shredded cheese and pour a few teaspoons of dressing over the top fold the tortilla over the toppings and enjoy!

Balsamic Dressing: 
slightly adapted from Food Network

1/8 cup balsamic vinegar
1 tsp brown sugar
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1/4 cup olive oil

Pour all ingredients into a small jar.  Put the lid on the jar and shake for about 15 seconds, until all the ingredients are combined.

  1. These wraps look delicious! I feel like I often forget that wraps can be a super easy, delicious, and inexpensive dinner on weeknights that I never remember to make!

  3. Do you shred and eat the beets raw? I assume so but have never eaten raw beets before.

  4. I made these tonight (leaving out the oil in the dressing) and they were DELICIOUS! I was a bit skeptical that they would taste too "healthy", but not true. Very very tasty!! Thanks for a great recipe.
