Life with a CSA

Every time I sit down to write one of these, I can't believe another week has gone by.  Also, I can't believe that I came up with another week of meals.

Getting the menu ready all at once can be stressful, but there is something wonderful about know what you are going to eat for the entire week.  It also keeps me from having multiple extra trips to the grocery store during that week, which take up time and money.

I think a written list at the grocery store is the best way to eat healthily and keep costs down.

To make dinner prep as smooth as my planned shopping trips, I typically check my menu first thing in the morning to see if there is anything that I can prep for dinner during Fox's nap time, and then at about 4:00PM, I start prepping dinner for a 5 or 5:30PM dinnertime. I can usually have it on the table not too long after Adam gets home, and then we save the leftovers for lunch the next day.

After a year of doing things this way, I have really gotten into my groove.  Not every night works out like that, but generally, dinner prep is a smooth, stress-free process.

I have realized that I do really well with routines.  I can easily remember what needs to happen when and make sure I do things in an organized, healthy way.  Now if only I could get my cleaning schedule on such an organized routine.  Maybe someday I will be able to get my act together!

Weekly Menu:  

Black Bean Soup with homemade tortilla chips - a favorite.  Always a favorite.
Corn and Cabbage Tacos with Chipotle Dressing - I really like this one.  You can make it with chicken, but we thought it tasted fine without it.
Roasted Vegetable Pesto Galette - It was supposed to be a beet galette, but it turned out I only had one beet left, so it ended up with a bunch of other veggies in it.
Sweet Potato and Kale Curry - This one has quickly become a go-to for an easy, healthy weeknight meal.
Kale, Beet Vegetable Bowl - Beautiful and colorful, but the dressing wasn't that great.  I would go for this dressing instead. When I made this dressing, I was eating it plain out of the food processor.  It was so good.
Apple Cheddar Pizza - Simple, easy and really good.  I promise I will share this one soon. It is definitely one of the easiest pizza recipes that I have ever made.
Mung Bean Yoga Bowl - Interesting flavors, and surprisingly good!  I kept expecting there to be more toppings for the salad, but it was great just how it was!  I made a few small swaps, but less than I usually do, and they were all similar swaps (collard greens for spinach, etc).

  3. I love black bean soup--I like to add ginger and sometimes jalapenos, and the spice/garlic/ginger combination is always really good for fighting off colds. I love the simple, healthy deliciousness of your vegetarian recipes! We use so much of sweet potatoes, kale, chickpeas and other greens so your recipes are perfect. Thanks!
