Our vegetables have been very good to us this week!  We had some super tasty dinners.  Also, I was going through my food photos this week and I made SO MANY DESSERTS!  Some of them will be appearing here in the next few weeks/months and some of them will be posted over on Creative Green Living, a site that I contribute to twice a month, so stay on the lookout for those.

This next week will probably be filled with old favorites, to use up ingredients that we regularly buy, as well as to help keep me sane in our final packing push (both for a trip to Las Vegas, and our summer move!).

To Use Up:  
Curly Kale
Collard Greens
Sweet Potato
Zucchini
Basil
Leek
Red Pepper
Yellow Pepper
Onions
Romaine Lettuce


Menu Plan:
Honey Mustard and Kale Salad - I don't really remember this one.  I think it was okay?  It was similar to other recipes I have made, but with less flavor.  Simple, and not bad, but not a total winner.
Collard Greens Cobbler - I made this with sweet potatoes, cooked like sausage and collard greens instead of the green beans, and it was even better than I had remembered. The sausage is really good in it, though, if you aren't vegetarian... just fyi!
Lemon and Chickpea Pasta - I really loved this one, and will be posting it here soon!
Cumin, Lime and Zucchini Quesadillas - These are pretty good, and a fun way to use up zucchini.
Leek and Zucchini Pizza - This one was fine, nothing amazing.  We didn't have quite enough cheese, so that might be why... I like a very cheesy pizza.
Mediterranean Meatball Tacos - This is a collaborative recipe that I made with Aidells.  The meatballs were pre-cooked, which I was curious about, because I haven't cooked with meat for a while (especially pre-cooked meat), but they were moist and flavorful! I was impressed, and pleased with the final result!  I will be posting the recipe for these tacos on Friday.

  1. I'm going to miss your CSS posts when you move! Are you going to do something similar in Utah? Also, those cumin/lime/zucchini quesadillas are amazing. You posted that recipe awhile back, and it has become a favorite in our house!

    1. I am glad you like these posts, Christianne! I have thought off and on about continuing them. I really like doing them, and they are a nice way to keep track of what I have made. I will have to keep doing them, even if they are not every week. Thanks for the feedback! Comments like this help me know what to post! I really appreciate it!

      Also, aren't those cumin and zucchini quesadillas good? I am so glad you like them!
